I think the whole environmental spin on eliminating trays is a bullshit byproduct of cost cutting and fat trimming. There are a few good reasons to eliminate trays, but I don't think the environment has much to do with it.

Reasons to eliminate trays, In order of importance:

1- People take more food when they use trays because the cost of doing so is negligible. It costs more for the dining hall to produce it and results in longer lines whether or not we eat all our food.
2- People eat less when they can't pile food onto their trays. That means less fat people, not that there are many at CMC anyway.
3- Trays yield greater waste due both to the extra food people take and the energy used to wash the trays, which carries both an economic and environmental cost to deal with.
